🍫 Enhancing Chocolate Coatings using Whey Permeate
At Proliant Dairy Ingredients, food scientists are finding more ways to utilize whey permeate. Proliant's low mineral VersiLac®, including VersiLac® LM7 and VersiLac® LMS, is a clean-label, cost-effective dairy ingredient ideal for chocolate coatings and compound applications. Because of its reduced mineral content and high lactose purity, it delivers a clean, dairy-forward flavor with fewer salty or cooked notes compared to other dairy solids making it a great solution for sweet treats.
Whey permeate can replace nonfat dry milk, whey powder, demineralized whey powder, or lactose in different applications. Proliant's VersiLac® products can offer up to 30–50% ingredient cost savings while while maintaining flavor, texture, and consumer-friendly labeling.
